Maison Zineb rereads the produce of Oran's market. Fish from the morning catch, seasonal vegetables, sea and land in the same service. No fixed menu: the kitchen adjusts each week to the market and the season.
Local producers set the menu. Fishermen of Oran, growers from the hinterland, olive presses from Kabylia. The kitchen is written based on what arrives, never the other way around.
Fourteen settings, two services per evening. Low light, linen tables, sea view. No loud music, no rushed turnover.
